After hearing that Cart-Driver made Eater’s Top 21 Best Restaurants List for 2015 in July, it was my top place I wanted to go. I had high expectations walking in, and left so impressed and full of one of the best pizzas I’ve had in the States. (Shout-out to Gusta Pizza in Florence.)
It is a teeny tiny restaurant, and you actually just order at the counter. Not what you would expect from a top restaurant, so I wasn’t sure what to think. We sat at the bar and had a bit of a wait for our pizzas. While waiting, someone came over to see how we were doing, and it ended up being one of the owners, Andrew Birkholz. He is one of the most humble and hospitable restaurateurs I’ve ever encountered, and hung out and chatted with us for a while. While we were there, a few people came in to pick up their pizza order, which wasn’t quite ready yet, so he offered them some complimentary Prosecco while they waited. I was impressed. My friends and I split a mushroom pizza with Taleggio cheese on it that was perfect, especially the crust. They make brick oven pizzas with the freshest ingredients they are chopping right in front of you. It’s a crazy busy place with the line usually out the door. I would recommend going earlier in the evening, when it’s hopefully less crowded, or it’s open until midnight, so you can grab a late night snack.
