I recently visited the flagship Waffle Up! Store in the Baker neighborhood after having the pleasure of catching their food truck around town. This food truck to brick & mortar success story specializes in what’s known as Liège Waffles, or traditional Belgian waffles, which according my server are smaller but also denser and sweeter than a traditional waffle as we think of it.
Waffle Up! offers a savory menu or a sweet menu. Feeling like something sweet I chose a Nutella and strawberry with whip waffle. It was a home run, sweet but not overly cloying, and the serving size was perfect for a nice breakfast paired with coffee. The coffee is from Denver-based Corvus Coffee and my requested Mocha with almond milk was delicious. It may not have had the barista decorative flair in the foam, but it tasted great, and that’s what really is most important to me in a coffee.
Waffles can be eaten plain or with the savory or sweet topping options. You can also request gluten-free waffles but they won’t be quite the same style of waffle and they do warn you that they use the same irons for all waffles, so if you are truly gluten sensitive there’s a risk of cross-contamination.
People who enjoy waffles have been mentioning Waffle Up! to me since I moved here, and I’ve seen the long lines that form wherever their food truck parks. By offering a flagship store, you can now plan a Waffle Up! waffle tasting into your larger plans for a day, and I do suggest that you plan a visit to try these absolutely delicious waffles!
